- Add the risotto rice and stir. Gradually add 1/4 of the stock at a time, stirring occasionally. And topping up with more stock as it absorbs.
- When most of the stock has absorbed and the rice is nearly cooked, add the chicken and stir to warm through.
- Season well, adding the parsley & Parmesan.
