  2. Finely chop the onions.
  3. Add butter and the onions to the saucepan on a gentle heat. Cook for 10mins until onions are softened.
  4. Slice the mushrooms and add to the cooked onions with thyme. Cook for 5 mins until the mushrooms are softened.
  5. Add the risotto rice and stir. Gradually add 1/4 of the stock at a time, stirring occasionally. And topping up with more stock as it absorbs.
  6. When most of the stock has absorbed and the rice is nearly cooked, add the chicken and stir to warm through.
  7. Season well, adding the parsley & Parmesan.
