  1. Soak soya chunk in hot water for 3 mins. Squiz up the water. Add yogurt into the soya chunk and mix well. Rest aside.
  2. Wash basmathi rice few times & soak it for 20 mins.
  3. Heat a pot with ghee, add bay leaf, cardomam, cinnamon and star anise. Saute until fragrant.
  4. Add onion & saute until the onion turn into golden brown.
  5. Add bird's eye chilli & ginger garlic paste. Saute until raw smell go off.
  6. Add tomato mix well. Saute for 2 mins. Add the vegetables and soya chunk. Saute for 3 mins under medium flame.
  7. Add Biryani powder and chilli powder. Mix well & cook for 3 more mins.
  8. Pour water and salt. Mix well. You can add 1 tbs of ghee and some fried onion if you want. Cover and cook the Biryani until the water fully absorbed.
  9. Once done turn off the stove and rest it for 15 mins.
