Instructions to make Chicken dum biryani:
- Wash and clean chicken pieces and marinate with curd, turmeric, chilli, coriander, garam masala powders, ginger garlic paste..give it a thorough mix marinate for at least for an hour, wash and soak rice for 20minutes
- Cook rice with whole garam masala ingredients..rice should be cooked only 75percent means you shdn't cook rice until it's done.keep aside.
- Place a cooker on medium flame add 2tbsp oil and 2tbsp ghee heat up add whole garam masala ingredients and tej patha/bay leaf saute it for two minutes add sliced onion fry until onion turns to light brown colour add ginger garlic paste saute for two more minutes
- Now add marinated chicken pieces.fry it for 3-4 minutes adjust masala powders if you want to at this stage, now add chopped tomatoes and coriander mint leaves.saute it and let the tomatoes cook soft.add salt and lemon juice.add little water close the lid and get jus one whistle.
- Take a heavy bottomed vessel with tight lid, let's prepare for the dum..put one layer of cooked chicken in the bottom and one layer of rice,sprinkle garam masala powder, gingerJulienne's, chopped mint, coriander leaves, fried onions, saffron milk,and some butter on top of the rice layer, repeat chicken layer and rice layer again, means repeat the same process.
- Now close the lid tightly of the vessel, make sure steam won't escape.put it on a low flame for 10-12minutes.and it's done. Enjoy
